Altamura is the vision of Chefs Elisabetta and Massimo Tundo, a husband-and-wife team from Milan. Every dish traces back to a family table in Italy: the pasta their mothers made, the wines their fathers poured, the flavors that shaped them.
Named after the southern Italian town famous for its bread, the restaurant captures the warmth of an Italian countryside home — where recipes were passed down with love, and every meal was a reason to gather.
Before Doral, they earned a loyal following at Dal Plin Italian Eatery in Miami’s Design District MIA Market, where their handmade pasta became one of the most talked-about dishes in the city.
In Italian we have a saying: to move forward, sometimes we need to step back and take a look at our past. At Altamura, we bring the warmth of our childhood kitchens to life.
We want every guest to feel like they have been welcomed into our home, gathered around the table to share a meal that is simple and full of joy.
The Name & Philosophy
Altamura is a small city in Puglia, southern Italy, known worldwide for its ancient bread — a loaf so iconic it holds a Protected Designation of Origin (DOP) status. For the Tundos, the name is more than geography. It is a symbol of what they believe cooking should be: honest, rooted, and made with care.
Their menu is a culinary journey through Italy’s hidden recipes and indigenous wine pairings — from the Alps to the boot. Every dish tells a story. Every plate holds a memory.
